Chocolate Muffins
Makes 8 muffins
Ingredients: 1 ½ cups almond meal ¼ cup cacao (or for a sweat tooth, use part cacao and part du chocolat) 1 tsp vanilla extract ¼ cup coconut oil or rice bran oil 1 tsp baking powder 2 eggs (for a vegan substitute combine 2 tbsp flax meal and 6 tbsp water) ¼ cup milk of your choice 2 tbsp of sweetener of choice (I use honey but agave or maple syrup will also be good) Method: Preheat oven to 160C fan forced. Combine all the dry ingredients - almond meal, cacao and baking powder. Make a well and then add all of the wet ingredients – eggs, oil, vanilla, milk and honey into the dry mixture. Spoon into 8 regular muffin tins. Bake for 20-25 minutes until just cooked through, try not to over cook. Allow cupcakes to cool for about 5-10 (if possible :P) and then enjoy. Serve alone or with Greek yoghurt, raspberry puree or zebra ice cream. Recipe originally adapted from The Healthy Chef x |
