Cupcake Scones
Makes 15 mini cupcakes
Ingredients: 3 eggs 1/4 cup honey 1/3 cup coconut oil grated zest of two lemons 2 teaspoon of baking power, keep the two teaspoons separate 1 teaspoon cider vinegar 2 cups of oat flour Method: Preheat the oven to 160C and grease 15 cupcake tins. Add the eggs, honey, coconut oil or butter, lemon zest, 1 teaspoon of baking powder and vinegar into a mix master and beat for a minute or so, until the batter is smooth and creamy. Combine the oat flour and 1 teaspoon of baking powder in a large mixing bowl. Fold in the batter until well combined. Spoon into the prepared muffin tins. Bake in the oven for 10-15 minutes or until a skewer comes out clean. Once the Cupcakes Scones are cooked and cooled i like to slice them in half and fill it with some jam and coconut cream!
