Muesli Cookies
Makes 20
Ingredients: 1/2 cup ground flaxseed 2 cups almond meal 1/2 cup pumpkin seeds ½ cup sunflower seeds 1/2 cup dried cranberries (or sultanas for a sugar free option) 1/2 cup melted coconut oil 1/2 cup honey 1 teaspoon vanilla essence Method: Preheat oven to 150 C. Combine all the dry ingredients; flaxseeds, almond meal, pumpkin seeds, sunflower seeds and cranberries. Add all the wet ingredients to the dry; melted coconut oil and honey. Mix through until well combined. Divide into 20 balls and place onto a baking tray lined with baking paper then flatten slightly using the back of a fork. Bake for 15-20 minutes until golden.
