Quinoa Pizza Crust
Makes 1 medium pizza (serves 1)
Ingredients: Base: 3/4 of a cup raw quinoa (soaked for eight hours) 1 teaspoon apple cider vinegar 2 teaspoons mixed herbs (oregano and basil ) Small pinch chili flakes ½ teaspoon salt 1-2 tablespoon chickpea flour (depending on the stickiness of the dough) Optional toppings: Tomato paste Spinach leaves Mushrooms Pumpkin Capsicum Feta Method: Place the quinoa in a large bowl and cover it with water for eight hours, make sure that it’s covered by a few centimeters. Leave this to one side. Once you’re ready to make the pizza, pre-heat the oven to 190C. Drain any water left in the quinoa bowl, before putting the quinoa into a food processor with the apple cider vinegar, herb, chili flakes and chickpea flour. Blend for a few minutes until smooth dough forms. Line the bottom of a pizza dish with baking paper and bake for about 15 minutes, until the base is firm.
