Quinoa Sushi
Makes 8 hand rolls
Ingredients: 1 1/2 cups quinoa, cooked 1/2 avocado 2-3 cucumbers, sliced thinly 1 cup spinach leaves, firmly packed 1 carrot, sliced ¼ cup hummus (or dip of your choice) 4 nori sheets 2 eggs, cooked as an omelet (or any protein of your choice) Method: Cook the quinoa and chop your chosen vegetables. Place the nori roll shiny face down on top of a sushi rolling mat. Cover with a thin layer of hummus, leaving two strips closest and furthest away from you without hummus. Place the quinoa on top on the hummus and flatten down. Place your filling in the middle and roll the nori roll. Holding the edge of the mat with your thumbs, lift it along with the filling and roll away from you. Hold the filling as you roll and gently pull the mat as you continue rolling. Once you have a neat roll, fold your hands over the mat to tighten the roll. Moisten the edge of the nori with water to seal.
