Zoodle Pasta
Serves 4
Ingredients: 8 zucchinis (2 per person) 800g whole tinned tomatoes 1 garlic clove 6 cups mushrooms 1 tablespoon oregano 1 tablespoon basil 1 brown onion, diced coconut oil Method: Dice the onion and place in a pan with a little bit of coconut oil and cook. Place the tinned tomato, basil, oregano, garlic, onion and mushrooms in a large saucepan. Bring the saucepan to a boil then bring it down to a simmer for 15 to 20 minutes. Continue to stir every few minutes and break down the tomatoes. While the sauce is cooking use a spiraliser (fine peeler) and grate the zucchinis. Then place the zucchini in a bowl and microwave for two and a half minutes or place in a pan with a bit of coconut oil and sauté until cooked. Place the zucchini noodles in your selected serving dish and combine with the sauce. |
